Top Health Bites

Having healthy food options on hand is important to help you make good food choices when you're hungry. When it's time to eat, immediacy often takes priority, even if that means munching on a bag of chips or a sugary granola bar. 

These Top Health Bites are easy to make ahead of time and store for a few days. That way, you can have a quick breakfast when you are running out the door, or can snack on a few at work instead of grabbing something from the vending machine. And these little muffins are packed with the nutritional power of superfoods, including being an excellent source of vitamin A, thanks to the use of our Top Health superfood powder mix. 


Ingredients:

  • 40g Top Health
  • 220g Spelt Flour
  • 20g Lucuma
  • 20g Cacao
  • 60g Raw Sugar
  • 300ml Coconut Milk
  • 6 tbsp of melted coconut oil
  • 4 tbsp of organic peanut butter 
  • 2 tsp of liquid vanilla
  • 1 tsp spoon of baking soda

Mix all the ingredients together in a bowl. Grease a muffin tin with melted coconut oil. Bake at 180 ºC during 15-20 minutes. If using a sponge cake pan, bake for about 30-45 minutes.


When the muffins have cooled, remove from the pan and enjoy! The recipe makes 20 muffins.
