Green Superfood Pancakes

Getting in the recommended amount of greens each day can be tough, so it’s important to try and include greens in every meal. A breakfast smoothie with a handful of greens is an easy choice, but sometimes we’re in the mood for more traditional breakfast fare. So we decided to greenify a famous breakfast classic: pancakes!

The addition of our Top Health mix makes these pancakes a great immune-boosting breakfast option. This mix contains superfood greens like kale, spirulina, barley grass and Klamath algae (plus 5 other non-green superfoods!), and all of the nutritional goodness they give you. These pancakes are also a good source of Vitamin A and a lot of B-Vitamins such as Vitamin B1 and Vitamin B2 and Magnesium.  

Plus, they have also been tested and approved by picky young eaters!

Ingredients:

  • 10g Top Health
  • 80g Oatmeal (Use gluten-free oats for gluten allergies)
  • 20g Raw sugar
  • 50 ml Coconut milk
  • 2 Eggs (vegans or egg allergies: see our substitution tips)

Mix all the ingredients together in a bowl. Separate the dough into 2 equal parts and coat the pan with a little coconut oil. Cook the pancakes until they are brown.

You can eat your pancakes with nut butter, fruits, nuts, chia seeds, goji berries and more. For sweeter pancakes, drizzle with your favorite natural sweetener on top.

Makes 2 large pancakes.
