Extreme Muffins

Gear up for a big day! Getting the right fuel in the morning is one of the best ways you can make sure you have enough energy to conquer whatever the day holds.


We created this superfood muffin recipe to be the perfect energy boost - two muffins will give you all the energy you need. It’s easy to whip up a batch of these on the weekends so you have an on-the-go but power-fuel breakfast for those busy weekday mornings. These muffins are also gluten free, vegan and a good source of vitamin D, iron and calcium.

One Muffin contains 335mg of caffeine, which is 4 times a can of Red Bull or 2 times a Starbucks Grande Cappuccino. Caffeine comes naturally from maca and guarana, nothing else.


Recipe for 6 muffins.


Ingredients:

  • 60g Extreme Energy superfood powder mix
  • 50g Almond Flour*
  • 50g Sweet Potato/Rice/Spelt Flour
  • 20g Coconut oil
  • 2 Eggs
  • 100 ml vegan milk**
  • 1 tsp of baking soda
  • 30g raw sugar
  • 30g 85% dark chocolate
  • Agave syrup

*Can be replaced by any other nut flour
**For example: almond/soy/coconut/rice/oatmilk


Recipe calculated with almond flour, rice flour and rice milk.


Mix together all the ingredients except the chocolate and the agave syrup. Fill 6 muffin molds with the mix. Add 4 small pieces of the 85% dark chocolate (cut a half square in four pieces) in the mix of each mold and put other 4 on the top.


Preheat the oven to reach 180 ºC and bake the raw muffins during 20/30 minutes approximately (varies based on the oven).


Once they have cooled, remove the muffins from the pan and top them with some coconut shavings. Drizzle with your preferred sweetener on top if your sweet tooth needs something a little extra.
